Cooks and their helpers used a mortar and pestle to grind herbs, whole spices, rock salt, and loaf sugar to make them ready for use. Young children could handle this task while an adult performed heavier and more difficult food preparation. The spices themselves were far more costly than the tool used to pound them. Physicians found a mortar and pestle useful for preparing medicines.
