Cooks and their helpers used a mortar and pestle to grind herbs, whole spices, rock salt, and loafsugar to make them ready for use. Young children could handle this job while an adult did the heavier and harder kitchen work. The spices cost a lot more than the tool used to pound them. Doctors found a mortar and pestle useful for preparing medicines.
